Healthy Nom Noms.

I'm really trying to make an effort to whip up some HEALTHY quick yumminess.  I'm going to try to make easy to re-heat breakfasts for the fam and get inspired and in the meantime... stay healthy.


Attempt 2-


The Orange Beast returns with... 
Reduced Sugar Pumpkin Walnut Devils Food Cake Muffins
(That's a mouth-full)






The recipe is EASY PEASY and they only have 95 calories.


One box of reduced sugar Devils Food Cake
One Can of Pure Pumpkin ( I used Libby's)
1/2 cup organic 2% Milk
1/2 cup of water.


Mix together in the Orange Beast.
Spoon into Cupcake holders.


Made 12.. plus a loaf pan of extra yumminess that I will bring in to work tomorrow to share.
Sprinkle with crushed walnuts
 (and 2 ghiradelli Chocolate chips)


Bake 18 minutes on 375.
(25 minutes for the loaf pan)

Chocolate Chip Whole-Wheat 
Banana Nut Muffins




Who would have thought I could make breakfast for the whole week by making YUMMY MUFFINS that pack a huge punch of nutrition.  
Here's the recipe

1 3/4 cups of whole wheat flour
(I used the King Arther White Whole Wheat flour)
3/4 cup of brown sugar
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 tsp of salt

1 egg
3/4 cup of apple sauce
1/2 cup plain greek yogurt
2 teaspoons of vanilla extract
2 ripe mashed bananas

3/4 cup of smisweet chocolate chips

Directions:
Preheat oven to 375
Use cupcake pan or muffin pan with liners

In a medium mixing bowl combine dry ingredients together.
Mix them together well.

In a seperate bowl add the egg, applesuace, greek yogurt, and vanilla.  Using the mixer on low incorporate all the ingredients together. 
Slowly mixin the dry ingredients and mix gently.  Lumps are ok. 
(Don't over mix)

Fold in the mashed bananas, walnuts, and chocolate chips.

Scoop into  muffin cups 2/3 full.  They really fluff up as they cook.

Bake 18-23 minutes.

Allow them to cool.

Freeze some, and enjoy the rest for a quick and easy on the go 
breakfast for the week.

Cynthia Taylor Photo Session

There is something so majestic about horses. Just being around them for a few minutes I could feel my stress melting away. Cynthia has found a perfect serenity away from all the drama in life with her horses and stable off of 66. The love she has for the them was obvious the minute I watched her interact with them.. and the feeling is mutual. Such a sweet session. I even had a chance to ride Scout bareback.. He just walked in circles and it was still SO much fun. Some day maybe I'll even get up the nerve to trot like her. 

AMAZING.

Luck O' The Irish... Ireland 2012



It's been a VERY long time since Sean and I have taken a vacation together without Austin.  I almost forgot that I fell in love with him long before he was a "Daddy."  Ireland was filled with so much magic.  From Leprachaun houses, to stories of fairies, to beautiful castles... it was absolutely dreamy.  It also happened to be a photographers dream come true.  I would love to go back and take a car out to the country and spend weeks just capturing all the beauty.

Special thanks to one of my best friends, Fran Walker, for catching such amazing shots of me snapping pics and of Sean and I.  You are incredible. LOVE YOU.

Beatles Birthday Party

BRODIEmania Beatles themed Photo Booth and Birthday Party


OK.. IF you didn't know, one of my best friends LIsa Zitner has a GIFT for party planning.  Check out the SUPER CUTE Beatles themed party she did for her son, Brodie's, 2 year old birthday party.  From FAB FOUR cake pops to Yellow Submarine Twinkies, so Seargent Dr. Pepper's- There was NO detail overlooked.  SO amazing in every way.  I was so excited to help with the Beatles Photo Booth.  I love themed parties!!!
